If the smell of this pot o’ gold doesn’t remind you of fall, I don’t know what does! Envision waking up to the rich aroma of hot apple crisp flooding every room in your house. Well, dreams can come true…

I did not have measuring cups when I made this but I’m pretty good at eyeballing after all the time I’ve spent on food prepping. This recipe made about 12 servings. One of the perks of this recipe is that you can keep the batch in the fridge for up to 1 week. Breakfast will always be waiting for you! If you want to cut the servings from 12 to 6, decrease the slow cooker time by 1 hour (so 7 hours on low instead of 8 hours on low.)

APPLE PIE OATMEAL

  • 2 cups of steel cut oats
  • 3 cups water
  • 3 cups almond milk
  • 1 snack sized organic apple sauce
  • 1/4 cup of honey (maple syrup, just as good)
  • 4 peeled and chopped McIntosh big apples
  • 1/4 cup slivered almonds (Alt: walnuts. Both are <3 healthy)
  • 2 tbsp of maca powder for added health benefit. Alt: chia seeds or flax seeds
  • 8 dashes of cinnamon
  • 8 dashes of apple pie spice

DIRECTIONS:

**Spray pot with organic cooking spray, then toss in all ingredients. Add both liquids last. Set slow cooker on low for 8 hours. Come home or wake up to the scent of what heaven may smell like 🙂
