Sometimes I crave hearty sandwiches. A lot of the time, I crave hearty sandwiches, but most are loaded with calories. My brother was sick of hearing about my craving and decided to do something for me. He created this delicious, nutritious, power packed panini that is totally TDF!!! Now you can enjoy this as well 🙂

 

INGREDIENTS:

  • 1/4 cup chopped jalapeno
  • 1/4 cut avocado
  • 1/2 plum tomato
  • 1 leef romaine lettuce
  • 1/2 oz of goat cheese
  • 3 oz chicken breast
  • 2 slices whole grain Ezekiel bread
Total Calories in entire sandwich: 385
INSTRUCTIONS:
Begin by butterflying chicken to make a thin chicken breast. It should not be too thick because this could cause the bread to be soggy later on. Before putting the chicken on the grill (foreman for less fat), preheat the oven at 325 degrees. While preheating, toast bread very lightly to make it somewhat stiff. This will help with smearing the avocado.
While bread is toasting, begin by cutting avocado into small slices, being able to smear. You should only use 1/4 avocado, just enough to layer one side of the bread. Then slice the tomato into thin slices. Cut fresh jalapeno into 6 thin slices.
After done slicing, the grill should be done preheating, and bread should be done toasting… Again, the bread is very lightly toasted.
Place chicken on the grill.
While chicken is on the grill, we begin making the sandwich. To build the sandwich, we will only be using one piece of bread. Begin by smearing avocado on the bread. It should be a thin layer. Then lay the layer of tomato on top of the avocado, then the jalapeno on top of the tomato. This should cover up all of the bread. When that is complete, we put the goat cheese on top of the jalapenos. There should be enough goat cheese to cover a thin layer over the vegetables. Lastly, we lay the thin layer of lettuce of the cheese.
By this time, our chicken should be done cooking. Lay the chicken on top of the lettuce and then cover with other slice of bread. Then spray the non stick cooking on either the foreman or panini maker. Then we panini the sandwich.
Cut the sandwich in half and enjoy!
