Are you looking for a super clean, filling, simple, grab n’ go, breakfast option that is loaded with flavor? I’ve created it for you. The Maple Oat Protein Pancake is here. Not to toot, but this honestly is one of the most delicious breakfast creations I’ve made thus far. Since life is all about a flavorful balance, I’ve allowed some sugar (organic maple syrup), into the recipe. And since this may be enjoyed more as a breakfast meal, consuming natural sugar or higher GI foods is less damaging than eating later in the day when your body typically does not need the sugar or carbs for energy.

I’m sorry, I couldn’t control myself when my entire kitchen smelled like maple. When it came hot off the pan, I had to take a test bite before I snapped a photo:

*Makes 1 serving. Total prep and cook time: 8 or 9 minutes. For a whole meal. Pre-make for the week ahead. This ‘cake will stay delicious.

  • 1/3 cup organic low fat cottage cheese
  • 2 organic egg whites
  • 1/4 cup oat flour
  • 1 tbsp maple syrup
  • Dashes of cinnamon

Spray pan with organic cooking spray, or lightly coat pan with coconut oil. Blend batter thoroughly and spread onto pan. Cook on medium for 2 to 3 minutes on each side.
