Yesterday, I learned that today would be a snowed in Saturday here in NYC. Just what I was in the mood for! And then the thoughts rushed to my head…winter, holidays, snow, cozy homemade brunch, hot chocolate. Yes, hot chocolate became my inspiration to the “dessert for breakfast” recipe below. In addition, it’s loaded with healthful ingredients for your mind, body, and soul. I hope you, too, can wake up to falling snow flakes, plush slippers, hot chocolate coconut oatmeal, and rich black coffee on the side. Cheers to winter!!!
HOT CHOCOLATE COCONUT OATMEAL
Prep Time: Less than 5 minutes
Cook Time: 6-7 hours
Servings: 6
INGREDIENTS:
- 1 cup steel cut oats
- 1 cup unsweetened chocolate almond milk
- 1 cup water
- 1/3 cup shredded coconut
- 3 tbsp dark chocolate chips
- 3 tsp Maca powder (for added health benefit)
- 1 tbsp Truvia (or other natural sweetener)
- 8 shakes of cinnamon
Spray inside slow cooker with organic olive oil cooking spray. Toss all ingredients into pot and mix until ingredients are blended together. Set the timer at 6 hours on LOW. Once the 6 hours are complete, the slow cooker should automatically go into the WARM setting. Now, SET AND FORGET IT! Or…at least until the deep chocolate coconut smell awakens you 🙂
